[Introduction]
2-Ethylhexanol (2-EH) is a fatty alcohol, an organic compound, and a branched, eight-carbon chiral alcohol. It is a colorless liquid that is poorly soluble in water but soluble in most organic solvents. It is produced on a large scale for a variety of uses, such as solvents, flavors, and fragrances, particularly as a precursor for the production of other chemicals, such as plasticizers and emollients. It is found in natural plant fragrances.

5. Also used in the production of surfactants, dispersants, lubricants, emulsifiers, antioxidants, mineral processing agents, mercerizing agents and petroleum additives.
6. Commonly used in baked goods, frozen dairy products and puddings.
